And I think, even less of them are actually enjoying the process of making home food, they probably think: making food is hard or boring. Cheesy Smoked Sausage & Potato Casserole
















Ingredients:
3 cups Idaho potatoes, peeled, boiled, and cut into cubes
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage 
1/8 teaspoon paprika


Directions:
Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.). Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top. Bake in preheated 350°F oven for 35-45 minutes.

Big Apple Fritters
















Ingredients

    3

    cups all-purpose flour

    1½

    cups sugar

    3

    teaspoons baking powder

    ½

    teaspoon salt

    ¾

    teaspoon Apple Pie Spice

    2

    large eggs

    1

    cup milk

    1

    teaspoon vanilla

    2

    Tablespoons butter, softened

    1½

    cups peeled, chopped apples

    Oil for frying

    Confectioners sugar

    Pour oil into a deep skillet or Dutch oven to a depth of about 3 inches. Heat to 375 degrees. Sift flour, sugar, salt, and Apple Pie Spice into a large mixing bowl. Place eggs in a separate bowl and beat them lightly. Stir in milk and vanilla. Make a well in the center of the dry ingredients and pour in the milk mixture. Add butter and beat with a mixer on low speed to moisten, about ½ minute. S

    crape down sides of bowl and increase speed to medium for 2 minutes longer. Fold in apples. Using a ¼ cup size measuring cup, drop into hot oil. Be careful not to splash the oil on yourself. If your pot is not very large at the top, you may be able to cook only one at a time.As the fritters cook, they will rise to the top. When browned on the first side, carefully turn them over with a spatula t

    o brown the second side. Drain on paper towels and sprinkle immediately, and generously, with confectioner sugar or glaze I prefer glaze.To make glaze confectioners sugar and milk or water whisk together and glaze while warm.

Granny Cake

















Ingredients:
1 1/2 cup sugar
2 cup flour
1/2 tsp. salt (omit if using self-rising flour)
1 tsp. baking soda (omit if using self-rising flour)
2 eggs
1 (20 oz.) can crushed pineapple in its own juice (including juice)
1 cup brown sugar
1 cup chopped pecans

1 cup evaporated milk
1/2 cup sugar
1 stick margarine
1 tsp. vanilla


 Directions:
Mix the sugar, flour, salt, soda, eggs and pineapple together and pour into a 9 x 13 pan. Sprinkle the top with one cup brown sugar and one cup chopped pecans. Bake at 350 degrees for 45 minutes.

Cook the milk, sugar, margarine and vanilla until mixture comes to a rolling boil.

AFTER THE CAKE HAS BAKED AND RIGHT OUT OF THE OVEN, pour the cooked milk mixture over the entire cake.

Cheesy Chicken, Bacon, and Tator Tot Crock Pot Bake


















Ingredients

1 (32 ounce) bags tater tots

0.5 (3 ounce) jars bacon bits

5 boneless skinless chicken breasts

1 1/2 cups grated colby cheese

1 1/2 cups grated monterey jack pepper cheese

3/4 cup milk

salt and pepper


Directions

Grease the bottom of the crock pot.

Layer 1/2 the tater tots on the bottom of the pot.

Sprinkle with 1/4 of the jar of bacon bits.

Combine the two cheeses, and sprinkle 1/3 of it over the bacon and tots.

Top cheese with the chicken breasts.

Sprinkle chicken with salt and pepper to taste.

Top chicken with another 1/3 of cheese.

Sprinkle with another 1/4 of the jar of bacon bits.

Add remainder of the tater tots.

Top with final 1/3 of the cheese.
